3 Amazing Garden Pizzas to Make With Your Harvest

It’s fall! My favorite time of the year. Fall is the perfect time to make Garden fresh pizza. In October we have a lot of harvest to make unique flavors of pizza. So today I’m going to round-up some of my favorite fall harvest pizza recipes.

Herbs

Before your first frost date be sure to bring in your tender herbs, trees or flowers that you plan to keep indoors over winter. Basil is one of the first things to freeze so be sure to bring it in before the nights start getting too cold. Usually by the end of September I have all my herbs indoors. I have been able to keep the same basil plant for 3-4 years by bringing it indoors.

The secret to any good pizza has to be fresh garlic. Fall is also the time to plant bulbs, garlic being one of the main things we plant here in October. And garlic is a must have for any flavor of pizza.

The first things I bring into the house for our indoor garden are herbs. Fresh herbs in the winter are the best and making pizza with fresh herbs is the only way to go!

Today we made fresh pizza with our last harvest tomatoes and our fresh basil.

Homemade dough, homemade mozzarella cheese, fresh herbs, garlic, and veggies make this the best pizza. The Dough is so easy to make. And you can put all your favorite toppings.

Overnight Dough

The dough for pizza needs to be made ahead of time so it can be the perfect amount of chewy and crispy. Sometimes I even allow my dough to sit in the fridge overnight so that it has time to be just perfect.

Be sure to follow the instructions below for the perfect pizza crust.

Cooking the Pizza

For those of you amazing enough to own your own pizza oven you want to cook your pizza at about 800°F to get that artisan taste and look to your pizza. These Ooni pizza ovens are awesome for this! For the rest of us we will turn our ovens up as high as possible and bake on a hot pizza stone.

Ingredients
  

Dough

  • 2 Cups Water at 95° F
  • 4 Cups 00 Flour or Bread Flour
  • 1 tsp Dry Active Yeast
  • 2 tsp Sea Salt fine
  • 1 tsp honey or sugar

Pizza Sauce

  • 1 lb Home grown Fresh Tomatoes or bottled(2Q)
  • 4-6 cloves garlic large minced
  • 1 tbsp salt
  • 1 tiny pinch baking soda
  • 1 tbsp Dried Basil
  • 1 large Onion finely diced
  • 1 tbsp Olive Oil

Toppings

    Harvest Pizza

    • 2 Ripe Pears Thin Sliced
    • 1 Butternut Squash Cut Thin Rind On and par cooked
    • 1/2 Cup Gorgonzola Cheese Or Feta
    • 2 Garlic cloves mashed in Olive Oil
    • Chopped Sprinkled Walnuts Optional

    Fresco Fall Pizza

    • 2 Tbsp Basil Pesto
    • 1/4 Cup Fresh Spinach
    • 1/2 cup Preserved Artichoke Bottled or frozen
    • 1/2 Cup Ricotta
    • 1/2 Cup Mascarpone mixed with lemon zest
    • 2 cloves Fresh garlic minced
    • 2 Thinly Sliced Lemon with peel

    Autunno Mushroom

    • 1/2 cup Roasted Portabella & Button Mushroom
    • 1/2 cup Mascarpone
    • 1/4 cup Buffalo Mozzarella Fresh
    • 1 tbsp Garlic Oil
    • 1/4 cup Pizza Sauce
    • 1/4 cup Cooked Italian sausage

    Instructions
     

    Dough

    • 1. Mix the water, honey and yeast and let sit for 5 minutes
      2. Add the flour and mix to a shaggy dough (do not over mix)
      3. Let rest for 20 minutes
      4. Gently stretch (do not rip) the dough and form in into a ball
      5. let rest for another 30 minutes
      6. Divide the dough into four smooth balls. To make the balls round and smooth gently roll the dough in circles on the surface of the counter under your cupped hand.
      7. sprinkle semolina on the bottom of a large rectangle container. Place your balls of dough in the box and cover with a lid or plastic wrap. Allow to slowly raise a minimum of 4 hours. Leave over night in the fridge for best results.

    Sauce

    • Combine all the ingredients in a large pot on the stove and simmer for 1-2 hours until the juice of the tomatoes is reduced by 1/2

    Constructing Pizzas

    • 1. Gently stretch out your dough leaving about an inch for the crust of your pizza.
      2. Choose your desired toppings.
      3. Layer the sauce and your toppings on your pizza and bake in a 500° F oven for about 10-15 minutes. Until the cheese is melty and the dough is bubbly and slightly charred.
      Drizzle some warmed honey or garlic oil over your pizza to make it chef kiss perfect.
      I honestly can't choose a favorite between these pizzas so I usually end up making one of each when I have the dough for it.
