Lavender in the Winter Here in Utah our winters can be cold and dry. And most plants hate that combination but there are some plants that need that hibernation time and some that at least tolerate it. Some Lavender do very well over wintering as long as their roots can stay above -20 degrees Fahrenheit (-29 C) and they get a little water.
