Beautiful Blackberry Lavender Wedding Cake

The naked cake trend is so beautiful we had to try it ourselves. This blackberry lavender cake would be the center of attention at any wedding it is gorgeous!

The thing about wedding cakes is that they need to be beautiful and delicious. This meets both criteria with its temptingly juicy blackberries and its elegant lavender stems it can’t go wrong.

Best White Cake

Start with your favorite yellow or white cake recipe. We use the cake bible here at the farm because it makes sturdy and delicious cakes. You need a cake that can withstand a lot of weight put on it because between the frosting and the decorations it’s going to get heavy.

Frosting The Blackberry Lavender Cake

The frosting needs to be one that is smooth and durable that won’t melt when sitting out for hours during an event. Buttercream is our favorite frosting but test out your recipe before the big day. The frosting I used the first time with this cake was too soft and melty and the berries kept slipping off. You can always add more powdered sugar to stiffen the frosting but that will alter the taste of your frosting. It’s a tricky balance. If you are unsure of your frosting making capabilities don’t despair you can go to your local grocery bakery and ask them for some frosting. It’s better than the pre-made frosting in the store.

Layer your cakes with desired filling if using. Another note of caution: fillings can cause your cake to be lopsided or the slip so either choose a firmer filling like our lavender lemon curd or get some cake decorating sticks to hold it together

Now frost the cake fully. After the cake is completely frosted gently scrape the side with your spatula to remove most of the frosting on the sides only. This leaves all the crevices full of frosting but gives you that beautiful naked organic look.

Now my favorite part. For this cake you need about 24 oz. of fresh blackberries some fresh sage leaves and dried lavender stems (about 30) 4-5 inches in length.

Decorating

Place the berries in a crescent shape with the mid section loaded higher with berries and thinking out towards the tips. Before placing the tip berries place the sage leaves at both ends of the moon shape. Place the final berries and add the lavender stems near the tips and between the end berries. Do this on each level but not directly underneath each other.
