The Best Lemon Curd Recipe
This recipe for Lemon curd is so versatile and can be used in hundreds of desserts. I love to just eat it by itself even. But add just a hint of lavender and you’ve got yourself a rare delicacy.
What is Curd
Lemon curd is a pudding like dessert that is made with butter, eggs, sugar and fresh lemon. Cooked over the stove to thicken into a curd texture and then used as a filling for many different desserts.
What Can I Use it In
You can use this curd to fill any dessert that pairs well with lemon. Some of my favorites are Lemon Lavender filled Crepes, Lemon Tarts, Fruit Pizza, Lemon Raspberry cake, tea and scones. So many different things to make with this creamy, tart addition.
Tarts
Make a tender tart crust and fill it with curd. Top it with tender fresh berries from the garden.
Tea & Scones
There are a lot of things that we serve at our garden tea parties but one of my very favorite things to eat is english scones and lemon curd toped with fresh raspberries.
Pies
I always make a double batch of this recipe because I know it will keep well in the fridge and I can mix it in to anything that I need to make. One of my favorite things to do with extra curd is to mix 8 oz of cream cheese in with it and either use it to fill a graham cracker crust or to use it as the frosting for a fruit pizza. Add some fresh fruit to either of these and you have s dessert to remember.
Lemon Curd
Ingredients
- 3-4 Fresh Lemons zested and juiced
- 1 1/4 cup sugar
- 1/4 cup honey
- 1/4 lb butter
- 5 eggs
- 1/8 tsp salt
Instructions
- In a cold pot on the stove combine the sugar, honey and eggs do not turn on the heat during this step. Add the lemon juice and zest and the cold butter. Turn on the stove and stir continually.add salt cook for 10 minutes or until thickremove from heat *if you are adding lavender essential oil add only after the mixture has cooled slightly. add sparingly 2-4 drops only
