Lemon Curd

Ingredients
  

  • 3-4 Fresh Lemons zested and juiced
  • 1 1/4 cup sugar
  • 1/4 cup honey
  • 1/4 lb butter
  • 5 eggs
  • 1/8 tsp salt

Method
 

  1. In a cold pot on the stove combine the sugar, honey and eggs do not turn on the heat during this step.
    Add the lemon juice and zest and the cold butter. Turn on the stove and stir continually.
    add salt
    cook for 10 minutes or until thick
    remove from heat
    *if you are adding lavender essential oil add only after the mixture has cooled slightly. add sparingly 2-4 drops only
