Fresh Garden Pizza

Ingredients
  

Dough
  • 2 Cups Water at 95° F
  • 4 Cups 00 Flour or Bread Flour
  • 1 tsp Dry Active Yeast
  • 2 tsp Sea Salt fine
  • 1 tsp honey or sugar
Pizza Sauce
  • 1 lb Home grown Fresh Tomatoes or bottled(2Q)
  • 4-6 cloves garlic large minced
  • 1 tbsp salt
  • 1 tiny pinch baking soda
  • 1 tbsp Dried Basil
  • 1 large Onion finely diced
  • 1 tbsp Olive Oil
Toppings
Harvest Pizza
  • 2 Ripe Pears Thin Sliced
  • 1 Butternut Squash Cut Thin Rind On and par cooked
  • 1/2 Cup Gorgonzola Cheese Or Feta
  • 2 Garlic cloves mashed in Olive Oil
  • Chopped Sprinkled Walnuts Optional
Fresco Fall Pizza
  • 2 Tbsp Basil Pesto
  • 1/4 Cup Fresh Spinach
  • 1/2 cup Preserved Artichoke Bottled or frozen
  • 1/2 Cup Ricotta
  • 1/2 Cup Mascarpone mixed with lemon zest
  • 2 cloves Fresh garlic minced
  • 2 Thinly Sliced Lemon with peel
Autunno Mushroom
  • 1/2 cup Roasted Portabella & Button Mushroom
  • 1/2 cup Mascarpone
  • 1/4 cup Buffalo Mozzarella Fresh
  • 1 tbsp Garlic Oil
  • 1/4 cup Pizza Sauce
  • 1/4 cup Cooked Italian sausage

Method
 

Dough
  1. 1. Mix the water, honey and yeast and let sit for 5 minutes
    2. Add the flour and mix to a shaggy dough (do not over mix)
    3. Let rest for 20 minutes
    4. Gently stretch (do not rip) the dough and form in into a ball
    5. let rest for another 30 minutes
    6. Divide the dough into four smooth balls. To make the balls round and smooth gently roll the dough in circles on the surface of the counter under your cupped hand.
    7. sprinkle semolina on the bottom of a large rectangle container. Place your balls of dough in the box and cover with a lid or plastic wrap. Allow to slowly raise a minimum of 4 hours. Leave over night in the fridge for best results.
Sauce
  1. Combine all the ingredients in a large pot on the stove and simmer for 1-2 hours until the juice of the tomatoes is reduced by 1/2
Constructing Pizzas
  1. 1. Gently stretch out your dough leaving about an inch for the crust of your pizza.
    2. Choose your desired toppings.
    3. Layer the sauce and your toppings on your pizza and bake in a 500° F oven for about 10-15 minutes. Until the cheese is melty and the dough is bubbly and slightly charred.
    Drizzle some warmed honey or garlic oil over your pizza to make it chef kiss perfect.
    I honestly can't choose a favorite between these pizzas so I usually end up making one of each when I have the dough for it.
