The Best Spinach Artichoke Dip Harvested from Your Garden

Grow your own artichokes and make them into this delectable dish. This Recipe uses fresh grown artichoke and spinach added to creamy savory ingredients that combine into the best appetizer. This is one of my most requested recipes.

A few years ago my mother got me a couple of artichoke plants because we love artichokes and we love to grow new things. We didn’t expect them to do as well as they’ve done but they are such a great plant! They are perennial which means they come back every year in the spring and produce artichokes. Plant once, harvest forever. That’s my kind of plant!

How to Grow Artichoke

Artichokes do well in a sunny, warm, and well watered environment. They need to be covered if you experience harsh winters. I cover mine with leaves from the fall trees then if I’m expecting extra cold I put a large clear plastic container over for extra protection. They are tender plants but they can overwinter just fine. We love to steam them and eat with butter but my absolute favorite recipe is spinach artichoke dip.

Make it a Second Meal

This dip is great because if you have leftovers (which doesn’t happen often) you can boil some pasta add some grilled chicken and voilĂ  you have a main meal that everyone will love. My 2 year old loves when I add noodles to anything so if I can get her to eat veggies by adding noodles I’ll do it!

So here’s the secret recipe:

Spinach Artichoke Dip

Creamy, Chunky, Warm spinach dip that you can serve with confidence at any party
Prep Time 10 minutes
Cook Time 30 minutes

Equipment

  • Large Cast Iron Pan

Ingredients
  

  • 8 oz Butter
  • 4 cloves Garlic paste
  • 2 Tbsp Flour
  • 1 pint Heavy Cream
  • 4 oz Parmesan Cheese grated
  • 16 oz Artichoke quarted and cooked
  • 2 bunches Fresh Spinach
  • 1-2 tsp Salt
  • 1-2 tsp pepper
  • 1 cup Mozzarella Cheese

Instructions
 

  • 1.In a Cast Iron Sauce Pan Add butter and garlic cook for 1 minute until garlic is aromatic
    2. Add flour and cook for 2 minutes
    3. Add Heavy Whipping Cream and salt
    3. Add fresh, grated romano and parmesan cheese
    Mix together over medium heat until thick like Alfredo sauce
    Add spinach (fresh is best)
    Quarter and Cook artichoke
    Salt Pepper to taste
    Top with mozzarella cheese and stick under the broiler until lightly toasted
    Serve with tortilla chips or toasted bread

If you want to make it a meal boil 1 package of penne pasta and add to the sauce. Add grilled chicken (best chicken marinade found here)

It doesn’t get better than this when it comes to dips! This is by far our most requested dish.

    I believe that avoiding ready-made foods may be the first step for you to lose weight. They will often taste fine, but highly processed foods possess very little nutritional value, making you feed on more simply to have enough energy to get over the day. When you are constantly eating these foods, transitioning to whole grain products and other complex carbohydrates will help you to have more vigor while ingesting less.
