Herbs de Provence is an aromatic mix of fresh or dried herbs used in savory cuisines. This recipe will give you the basic ingredients to make your own Herbs de Provence.

Lavender

Lavender is becoming more and more popular thanks to food bloggers who like to try something a little bit different or unusual. I love when people try lavender in their cuisine for the first time. It’s definitely a flavor that you have to get used to but then again so are a lot of herbs and spices tried for the first time.

In making this herby mixture I recommend dry roasting your lavender buds before adding them to any recipe. Roasting your lavender buds will make the floral note a little lighter and make it taste a little nuttier and richer in over all flavor.

The variety I use for most recipes that call for culinary lavender is Munstead, a lavendula angustofolia variety. It can be found online or at some lavender farms.

Other Ingredients

The other herbs that make up the ingredients for Herbs de Provence or Rosemary, Marjoram, Thyme, Oregano and Savory. All of which you can grow in your herb be during the summer if you are in the United States. Some of these herbs are quite powerful in aroma so to get the exact mixture balance. Dry the herbs and mix in smaller amounts of the rosemary, and marjoram the strongest herbs.

Thyme and oregano are not as potent as marjoram and rosemary use these in larger quantities in the herb de Provence recipe.

Ingredients
  

  • 2 Tbsp Dried Rosemary
  • 2 Tbsp Dried Lavender Buds
  • 2 Tbsp Dried Thyme
  • 2 Tbsp Dried Terragon
  • 2 Tbsp Dried Savory
  • 2 Tbsp Dried Oregano
  • 1 Tbsp Dried Marjoram

Instructions
 

  • Roast the lavender buds in the oven for 1 minute. Watch carefully so that the buds do not get too dark.
    Grind each dried herb in a mortar and pestle and mix together
    Use for roasted chicken or fried potatoes for an added layer of flavor
